Chicken Alfredo Pizza



Ingredients
  • Crust for one large pizza
  • 1 Tbsp unsalted butter
  • 3 cloves garlic, minced
  • ½ cup heavy cream
  • ½ cup milk
  • ½ cup freshly grated parmesan cheese
  • 1 large egg yolk, beaten
  • salt and fresh ground black pepper, to taste
  • 1½ cups chopped, cooked chicken
  • 2-3 slices bacon, cooked and chopped
  • 1 heaping Tbsp chopped red onion
  • 1 cup shredded mozzarella cheese
Instructions
  1. In a saucepan over medium heat combine butter, garlic, cream and milk. Bring to a simmer. Remove from heat and stir in parmesan cheese and beaten egg yolk, whisking vigorously so the egg doesn't cook. Set aside to cool while you assemble your pizza.
  2. Roll/stretch your dough into a 12-14'' circle. Transfer to a pizza pan sprayed with cooking spray and sprinkled lightly with cornmeal. I like to pre-bake my crust for 5 minutes at 475 degrees F. Remove crust from oven. Spoon half of the alfredo sauce over the crust and use the back of a spoon to spread it evenly over the top. Sprinkle chopped chicken, bacon, and onion evenly over top. Drizzle with remaining alfredo sauce. Top with mozzarella cheese. (At this point I like to brush the outer crust with olive oil or melted butter. Optional.)
  3. Return to oven to bake for 7-10 minutes more, or until crust is golden and cheese is bubbly.

Crescent Cheese Danishes!


Ingredients
2 Crescent Roll Tubes
1­ 8 oz. package of Philly cream cheese (softened)
2 TB butter (fully melted)
1 tsp lemon juice
1/4 Cup of light brown Sugar
1/2 Cup of regular White Sugar
1 Teaspoon Pure Vanilla Extract


Glaze:
1/2 Cup powdered sugar
1 Teaspoon Pure Vanilla extract
4 Teaspoons of milk Instructions


1. Preheat over to 350F.
2. In a medium bowl, use a mixer to combine the softened cream cheese, lemon juice, pure vanilla extract and the white sugar until well combined.set aside.
3. Open your crescent roll tubes but do not unroll them
4. Use a sharp knife to cut through them­ slicing them. Make thick slices.
5. Lay each slice on a parchment lined cookie sheet.
6. Use your fingers or a small measuring cup to create a small wall around the edge (to hold the filling).
7. Using a brush, take the melted butter and add in the 1/4 cup of light brown sugar and mix
8. Brush the mixture over each danish
9. Dollop even amounts of the filling into each of the danishes
10. Bake at 350 for 16­18 minutes or until slightly golden brown
11. Let cool and add a drizzles of glaze.
12. In a small bowl combine all 3 ingredients and stir until smooth, then drizzle over each warm danish

13. Top with cherry, blueberry or strawberry filling!

Personally, Kristina is married and doggie mommy to Pekingese and Shih-Tzu pups. Although a New Jersey resident, she dreams of one day moving to Hawaii and living the ‘Aloha’ way. Interview with Kristina Rienzi

How did you come up with name of this book?
Breaking Evil is the second book in The Ensouled Trilogy, starting with Choosing Evil, and given the storyline the title just made sense to me. The main character, Serafina is forced to face the evil within and around her, and she struggles with whether she wants to embrace it, or resist it. She must decide if she'll break the cycle of evil, or join forces with it.  

Do you read yourself and if so what is your favorite genre?
I read a ton! I'll read anything from motivational non-fiction to science fiction to women's fiction. At the end of the day, I love a good story. If I had to pick, my favorite genres would be the ones I also write in mystery, suspense, thriller, horror and paranormal. 

Do you prefer to write in silence or with noise? Why?
I prefer to write in silence, which I can do when I write first thing in the morning. In the quiet, my mind becomes my complete focus, and I don't get distracted by anything else around me. Many times, I'm writing in the afternoon, so total silence isn't possible. When my dogs get up, they need to 'go to work' with me in the office, and then I'll have the television on in the background. My show of choice is the Twilight Zone (1960s version). Its energy inspires me and gets my right brain going strong. 

If you could choose one of your books to be made into a movie which would it be and why? 
Hands down, I'd recommend Choosing Evil, and then Breaking Evil and the final book (not yet released) in the trilogy. The trilogy's storyline is unique, and action packed. I think it would do really well on the big screen. 

Do you write one book at a time or do you have several going at a time?
I'd like to write one book at a time, but my brain is in five places at once at all times, so I do well writing several books at once. I usually have two to three going, and I jump back and forth as the storylines grab me. I typically have one book I'm focused on finishing first, but I hop around to others as my muse gets pulled in one direction or another. It makes for a fun time!

“If you trust me with your key, I’ll make the bed,” Cheryl said.


“Thanks.” Nathan was so relieved, he yanked her into a big hug.


The bag of bedding dropped to the floor with a thump. Her arms clutched his waist.


It wasn’t a move on his part. He was thankful for her help. But her breasts pressed against his chest. She stared up at him, her eyes going dark.


“Let go of my mom!” Josh stormed into the room. He pummeled Nathan’s leg with sharp jabs.


“Hey, slugger.” Nathan let go of Cheryl and she staggered back.


“Don’t hurt my mom.” Josh kicked him.


“Josh, stop.” Cheryl caught his hand and pulled him away. “Nathan was thanking me for helping him.”


“He touched you!”


“Not in a bad way,” she insisted.


Nathan slumped onto Issy’s bed. What the hell was happening? Had someone touched Cheryl in a bad way?


“Is...is everything okay?” Are we okay?


She knelt next to Josh. “Apologize to Mr. Nathan.”


“He shouldn’t touch you.” Josh stuck his chin out.


“It’s fine.” Nathan ran his hands through his hair. He nodded at Josh. “He was protecting you. That’s good.”


Josh glared back.


Cheryl looked at Nathan. “It’s never okay to hit someone.” She squeezed her son’s shoulder in silent communication.


“Sorry.” The kid spit the word out like it was venom.


“I understand.” Nathan nodded. “It’s a guy thing. We have to protect our moms, right?”


Josh didn’t answer. Thank goodness the kid didn’t have superpowers or Nathan would have been incinerated by the fire in his eyes.

When Kyle went to his car, the club was aglow with flashing blue and red lights. The wail of sirens assaulted his ears. Two ambulances were parked outside.

He caught a glimpse of a woman being carried out on a stretcher. Police had concealed the club with yellow tape. The last thing that he needed was to get pulled into this shit. To his relief, as the gate opened, he was able to get straight on the road. The timing couldn’t have been worse. Right now he needed Randy, but now he was embroiled with the night’s events. Kyle pulled out into the interstate. He pushed his foot down heavy on the accelerator; his pulse was beating hard in his chest. He tried to think back: Had there been any clues? He debated the pros and cons of going after her. If he found her, he knew that his rage would win and he wouldn’t be in control anymore. He imagined her, out there somewhere, laughing at him, thinking that she had gotten away with it. Meanwhile, he was under the microscope with the cops—especially with Detective Isla Bitch Morany. Even thinking about that woman made him want to punch something; he would love to wipe her smug know it all look off her face. But her badge protected her; it acted as a shield, because if she was working a normal job, there was no way she wouldn’t have had a fist or two to knock her back in line.

Kyle thought about the money he had parted with since this all began; he was satisfied that the bulk of his funds were off shore; Morany may have uncovered his dirty dealings, and they were enough to get him in hot water, but his reserves would be enough to save him, probably. He drove past a parade of billboards advertising the Love of God:

“Behold, I send you out as sheep in the midst of wolves; so be wise as serpents and innocent as doves.”

It felt as if that sign had been placed there especially for him. Things between him and Gaby had never been smooth, but he thought he had things in a structured order, and he was desperate to claw it back. He decided that he was going to do just as God had instructed: “Be wise as a serpent.”
